This makes a soft
cookie.
Pumpkin Cookies
- 2 sticks butter
- 3 cups sugar
- 2 eggs
- 1 large can pumpkin
- 1 teaspoon vanilla
- 5 cups all-purpose flour
- 2 teaspoons cinnamon
- 2 teaspoons nutmeg
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- Cream butter and sugar together.
- Add eggs and stir well.
- Add pumpkin and stir.
- Add cinnamon, nutmeg, baking soda, baking powder, and salt. Stir well.
- Add flour a little at time, stirring to mix well.
- Preheat oven to 350 degrees.
- On a cookie sheet lined with a silicone cookie sheet liner, drop dough onto the sheet, using a medium sized cookie dough scoop.
- Bake 12-16 minutes.
- Let cool one minute before removing from the sheet and place on rack to finish cooling.
- Makes approximately 60 medium sized cookies.
Bourbon Frosting
- 2 sticks butter
- 1 teaspoon vanilla
- 1 teaspoon bourbon
- 1 2lb. bag confectioner’s sugar
- Cream butter and confectioner’s sugar.
- Add vanilla and bourbon.
- Stir until smooth.
- Frost cookies when they are completely cooled.
- Enjoy.
