Ingredients:
- 3 lbs beef chuck roast – rub with salt and pepper
- 1 tablespoon olive oil
- ½ cup flour
Vegetables and seasonings:
- 1 onion, cut to make pieces
- 1 bag of baby carrots
- 2 bags of baby potatoes
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- ½ cup red wine (optional)
- 1 teaspoon salt
- ½ teaspoon pepper
- 2 tablespoons fresh parsley, chopped for garnish
Directions:
- Rub meat with salt and pepper. Then rub with flour.
- Heat olive oil.
- Brown meat in roasting pan.
- Add onions, and celery. Saute.
- Add the rest of the ½ cup flour to brown with the meat.
- Roast for an hour.
- Add rest of ingredients.
- Cover roaster.
- Roast in oven at 225 degrees.
- Roast for 4 hours.
Check for tenderness and serve.
