No Mess Bacon




  • 1 package of center cut bacon, regular thickness


  1. Arrange bacon slices on the rack of a baking pan.
  2. Place on the bottom rack of a cold oven.
  3. Turn oven on to 400 degrees.
  4. Bake for 33 minutes. 
  5. Remove from the oven and let cool slightly. 
  6. Remove the slices and place on a paper towel to dry before the bacon cools off too much.  As it cools, it will become more difficult to move from the rack without breaking the slices. 
  7. Enjoy.

Breakfast Casserole



  • 12 slices of bacon, fried, drained and crumbled
  • Non-stick cooking spray
  • 6 slices bread
  • 8 eggs
  • 1-12 ounce can of condensed milk
  • 4 ounces 2% milk
  • 1 small onion, chopped fine
  • 1 teaspoon prepared mustard
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 8 ounces shredded cheddar cheese

  1. Preheat oven to 350 degrees.
  2. Spray a 9 x 13 dish with non-stick cooking spray.
  3. Trim crusts off the bread, then cube the bread and spread them over the bottom of the baking dish.
  4. Take half the crumbled bacon and half the shredded cheese and sprinkle them evenly over the bread.
  5. In a mixing bowl, whisk the eggs for approximately a minute.
  6. Whisk in the condensed milk, and 2% milk.
  7. Add the chopped onion.
  8. Add the prepared mustard, salt and pepper. And whisk about 30 seconds.
  9. Pour mixture over the bread, bacon, and cheese over the bottom evenly.
  10. Top with the remaining bacon and cheese, spread evenly over the mixture.
  11. Bake for 40 minutes.
  12. Turn oven off.
  13. Let it sit in oven with the door open for 10 minutes.
  14. Cut into squares and serve.

Quiche Lorraine



  • 1 pie shell (I used Pillsbury)
  • 8 ounces Swiss cheese, shredded
  • 4 tablespoons flour
  • 6 ounces of ham (chopped)
  • 1 onion, chopped
  • 3 eggs
  • 8 oz. Evaporated milk (2/3 of a 12 ounce can)
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  1. Preheat oven at 375 degrees.
  2. Place pie shell in glass pie plate and flute edges or use frozen deep dish pie shell in aluminum pan.  (I used Aldi's.)
  3. Dock pie shell.  Place a pie weight string of beads in pie shell, including over the sides, and blind bake for 10 minutes.  
  4. Stir the 4 tablespoons flour into the shredded cheese.
  5. Place cheese and flour mixture in the bottom of the of shell.
  6. Saute chopped ham and chopped onions.
  7. Spread the chopped ham and sauteed onions on top of cheese.
  8. In the blender, mix the eggs, evaporated milk, mustard, and salt. You may also use a whisk, but be sure to whisk these items for 5 minutes. 
  9. Pour the blended mixture evenly over the bottom layers.
  10. Reduce oven temperature to 300 degrees.
  11. Bake 75 minutes on the center over rack.  Do the knife test in the center to make sure that it is done.  If necessary, add a few more minutes to the baking time.
  12. Serve and enjoy.

Sausage Bread

  • 1 lb. Sage bulk sausage
  • 8 oz. Shredded mozzarella
  • 1 loaf Pillsbury French loaf in a tube
  • 1 egg white

1. Brown and stir sausage.

2. Spray baking sheet. Spread out French loaf. Pour a strip of the browned sausage down the middle of the French loaf. Spread the mozzarella over the top. Bring the sides of the French loaf up together and seal.

3. Brush with egg white.

4. Bake at 350 degrees for 30 minutes.

5. Remove from oven and let sit for 5 minutes.

6. Slice into 8 pieces and serve.
