Italian Stracatto



Ingredients:

  • 3 lbs beef chuck roast – rub with salt and pepper
  • 1 tablespoon olive oil
  • ½ cup flour

Vegetables and seasonings:

  • 1 onion, cut to make pieces
  • 1 bag of baby carrots
  • 2 bags of baby potatoes
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • ½ cup red wine (optional)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons fresh parsley, chopped for garnish

Directions:

  1. Rub meat with salt and pepper. Then rub with flour.
  2. Heat olive oil.
  3. Brown meat in roasting pan.
  4. Add onions, and celery.  Saute.
  5. Add the rest of the ½ cup flour to brown with the meat.
  6. Roast for an hour.
  7. Add rest of ingredients.
  8. Cover roaster.
  9. Roast in oven at 225 degrees.
  10. Roast for 4 hours.

Check for tenderness and serve.

Carla's Pork Roast


  • 3-4 pound pork roast
  • 1 bottle Italian salad dressing
  • 1 jar of apricot preserves
  • 1 hand full of brown sugar

  1. Brown the pork roast.
  2. Put in crockpot with other ingredients.
  3. Cook on low for 8 hours.
  4. Slice or shred and enjoy.

Pastreubens

 

For each sandwich:

  • 2 slices rye bread
  • 2 tablespoons mayonnaise
  • 2 tablespoons thousand island dressing
  • 4 slices of very thinly sliced pastrami
  • 4 slices of very thinly sliced Swiss cheese
  • ¼ cup of refrigerated sauerkraut, blotted with a paper towel
  • 4 toothpicks

  1. Spread one side of each bread slice with mayonnaise.
  2. Spread one side of each bread slice with thousand island dressing.
  3. Put two slices of Swiss cheese on top of the thousand island dressing on each piece.
  4. Put two slices of pastrami on top of the cheese on each piece.
  5. Put half the sauerkraut on top of the pastrami. 
  6. Put the halves of each sandwich together.
  7. Heat air fryer for 5 minutes at 390 degrees.
  8. Put toothpicks through the sandwich so the air fryer doesn’t blow the top around.
  9. Place sandwich in the air fryer on a rack. 
  10. Air fry at 390 degrees for 5 minutes. 
  11. Flip the sandwich and air fry 3 more minutes at 390 degrees. 

Remove and serve.

Beef with Broccoli

 




Beef with Broccoli 

I have been looking for a recipe to make beef and broccoli in which you do not add sugar.  I cannot use oyster sauce, so I think this comes very close to the one they make at Mandarin Garden.  

  • 1 package shaved beef
  • 2 tablespoons olive oil
  • 1 bunch broccoli

Sauce:

  • 1 cup cold water
  • ¾ cup low sodium soy sauce
  • 4 tablespoons seasoned sesame oil
  • 3 Tablespoons corn starch
  • 8 cloves of minced garlic or 4 teaspoons of minced refrigerated garlic
  • 4 teaspoons of minced ginger (not the dried kind)
  • ½  teaspoon black pepper

Maybe be served with rice if desired.

  1. Wash and separate the broccoli florets. 
  2. Place the florets in a covered casserole dish with 2 tablespoons of water. 
  3. Microwave for 6 minutes at full power.
  4. In a skillet, place the two tablespoons of olive oil in the pan and brown the shaved beef, cutting it as you brown it. 
  5. When the broccoli is done steaming in the microwave, add it to the beef in the skillet. 
  6. Cook 15 minutes on medium heat with the lid on it.
  7. Put all the sauce ingredients into a bowl.  Stir.
  8. Add the sauce to the meat and broccoli mixture, stirring. 
  9. Let the mixture cook for approximately 10 minutes. 
  10. Cook rice (if desired).  Add some to a plate and spoon the mixture onto the plate.
  11.  Serve and enjoy.

Air Fryer Tortilla Pizza




  • 1 small tortilla
  • 3 teaspoons pizza sauce
  • 2 pieces bacon, fried
  • 2 tablespoons shredded mozzarella cheese

  1. Heat air fryer to 400 for 2 minutes.
  2. Place tortilla on a piece of parchment or aluminum foil to avoid making a mess in the air fryer.
  3. Dock tortilla with a fork approximately 20 times.
  4. Air fry tortilla for 2 minutes. 
  5. Flip. 
  6. Add sauce, bacon and cheese
  7. Air fry for 4 minutes. 
  8. Enjoy.

No Mess Bacon




  • 1 package of center cut bacon, regular thickness


  1. Arrange bacon slices on the rack of a baking pan.
  2. Place on the bottom rack of a cold oven.
  3. Turn oven on to 400 degrees.
  4. Bake for 33 minutes. 
  5. Remove from the oven and let cool slightly. 
  6. Remove the slices and place on a paper towel to dry before the bacon cools off too much.  As it cools, it will become more difficult to move from the rack without breaking the slices. 
  7. Enjoy.

Hamburger Pie



Meat layer
  • 1 lb. ground beef
  • ½ cup chopped onion
  • ½ teaspoon salt
  • dash pepper
  • 1 160 oz. can French style green beans, drained
  • 1 can tomato soup
Mashed Potato Layer (or your favorite recipe of making homemade mashed potatoes for 8)
  • 3 1/3 cups water
  • 5 tablespoons butter
  • ¾ teaspoon salt
  • ¾ cup milk
  • 3 1/3 cups mashed potato flakes
Topping
  • ½ pound shredded cheddar cheese
Instructions


Layer in this order in a 13 x 9” greased baking dish:
  1. Meat layer
  2. Mashed Potato Layer
  3. Topping
Bake at 350 degrees for 25-35 minutes. Let sit 5 minutes before cutting and serving with a spatula. Enjoy.

Glazed Ham



  • I large ham
  • ¼ cup light brown sugar
  • 2 tablespoons yellow mustard
  • 1 teaspoon ground cloves
  • 6 oz. Pepsi


  1. Bake ham in oven appropriate time at 350 degrees for its size.
  2. Mix ingredients in a bowl.
  3. Brush ham with the glaze in the last 30 minutes of baking.
  4. Slice and enjoy.

Corned Beef and Veggies Dinner



  • 1 package corned beef (including seasoning packet)
  • water to cover
  • 1 onion, cut into quarters
  • 2 bay leaves
  • 2 teaspoons minced garlic


  • 6 potatoes, peeled and quartered
  • ¾ lb. baby carrots
  • 1 head cabbage, cored and cut into sixths


Glaze:
  • 1 cup light brown sugar
  • 1/3 cup Gulden's Spicy Mustard


  • Loaf of soda bread (optional)

Directions:

  1. In a crockpot, place the corned beef, seasoning packet, onion, and bay leaves. Cover with water. Cook on low for 11 hours (For me, that means starting at 5:00 a.m.).
  2. Remove meat and cool in refrigerator about an hour to make it easier to slice.
  3. Continue to keep the liquid hot in the crockpot.
  4. Remove fat blanket, then slice the meat and put it in a baking dish.
  5. Mix glaze ingredients and brush over the meat.
  6. Bake the meat uncovered in the oven about 30 minutes at 325 degrees. Keep checking to make sure the glaze doesn't get too brown.
  7. Meanwhile, put the hot liquid in a Dutch oven and bring to a boil.
  8. Add potatoes and cook for 20 minutes.
  9. Add carrots and cook for 5 minutes.
  10. Add cabbage wedges, cover and cook additional 20 minutes.
  11. Remove the bay leaves. Serve with the meat with the vegetables and purchased soda bread (optional).

Cheeseburger in Paradise (Healthier Version)


Ingredients:
  • 1 pound lean ground beef
  • 1 onion, chopped
  • ½ teaspoon garlic salt
  • ½ teaspoon seasoned salt
  • 1 teaspoon Worcestershire sauce

  • ¾ cup shredded reduced fat (2 % milk) cheddar cheese
  • ¼ cup shredded part skim shredded mozzarella

  • 1 cup 2% milk
  • 2 eggs
  • ½ cup Bisquick

Directions:

  1. In a skillet, brown ground beef along with the chopped onion, until all the beef is browned. Pat with paper towels to remove any extra fat on it. Add salts and Worcestershire sauce and stir.
  2. Mix the two cheeses to distribute evenly.
  3. In a blender, mix eggs, Bisquick, and milk.
  4. In a lightly greased pie dish, layer the meat mixture, then top with the cheese mixture.
  5. Pour the liquid mixture over the two layers.
  6. Bake at 375 degrees for 35 minutes or until an inserted knife comes out clean.

Makes 4 generous servings.

Nancy's Stuffed Peppers




  • 1 cup brown rice (not the instant cook rice)
  • 2 cups water 
  • 1 lb. ground chuck
  • 1 ½ teaspoons salt
  • ¼ teaspoon pepper
  • ½ teaspoon minced garlic (from refrigerator jar)
  • 1 large onion, chopped 
  • 4 or 5 green bell peppers
  • 2 cans condensed tomato soup
  • ½ soup can water 


Bring rice to boil in the two cups water and simmer for 45 minutes. Stir occasionally, so it does not stick.

Wash and top the green peppers, scooping the ribs and seeds out to discard.


Combine and mix well the ground chuck, cooked rice, salt, pepper, minced garlic, onion and one of the cans of condensed tomato soup. 


In a microwavable covered dish, stuff and place the peppers, open side up.


Mix ½ cup water with the other can of condensed tomato soup, and pour mixture over the tops of the peppers.


Cover the filled dish and microwave 30 minutes on power level 5.
Remove lid and baste the tops of the peppers with the soup mixture that has drained to the bottom of the dish.
Turn the dish, cover again, and microwave for 30 more minutes at power level 5.
Remove, let set for about 5 minutes and serve.

Glorified Pork Chops


  • 1-2 pounds pork chops or a pork tenderloin sliced into ½ inch – ¾ inch medallions
  • Adolph’s seasoned meat tenderizer
  • Flour
  • Salt
  • Pepper
  • Canola or olive oil
  • 1 can reduced fat Cream of Celery Soup
  • 1 8oz container of lite Sour Cream
  • ¾ cup of fat free milk

  1. Sprinkle pork with tenderizer on all sides and let rest for 15 minutes.
  2. Shake pork pieces in a bag of flour.
  3. Pour enough oil to keep from sticking on the bottom of a skillet and heat to medium high.
  4. When oil is hot enough to cause meat to sizzle, placed floured pork in skillet.
  5. Salt and pepper pork pieces as much as you typically do to other meats. Brown floured meat.
  6. Turn pieces and repeat salt and peppering. Brown other sides of floured pork.
  7. Place lid on frying pan and let cook on medium to low heat for about 10 minutes.
  8. Remove pieces of pork to plate.
  9. Dump rest of flour in skillet and let brown. After flour is browned, pour any extra oil off.
  10. Add the Cream of Celery soup to the browned flour bits and stir.
  11. Add the Lite Sour Cream and stir. Add the milk and bring heat to just under boiling. Do not let this mixture boil or it will curdle.
  12. Remove from heat.
  13. Add the pork chops (medallions) back to the pan and stir to make sure they are coated.
  14. You can use the extra gravy on fried potatoes or mashed potatoes if you wish.
  15. Serve.
  16. Enjoy.
