Cherry Dump Dessert

 


  • 2 cans cherry pie filling
  • 1 teaspoon vanilla
  • 1 yellow cake mix
  • 1 stick butter

  1. Preheat oven to 350 degrees.
  2. Spray 9 x 13 inch glass baking dish with non-stick spray.
  3. Spread cherry pie filling in bottom of the baking dish.
  4. Stir the vanilla in the pie filling.
  5. Sprinkle the cake mix in the next layer.
  6. Cut the butter into 18 slices.
  7. Spread over the top of the cake mix.
  8. Bake at 350 degrees for 1 hour.
  9. Serve with ice cream while warm (optional).

Lemon or Lime Bars

Lemon or Lime Bars 

Crust:

  • 2 cups flour
  • 2 sticks butter
  • ½ cup powdered sugar 

Filling:

  • 4 eggs
  • 4 Tablespoons lemon juice (or lime juice with a few drops of food coloring)
  • 2 cups sugar
  • 4 Tablespoons flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

  1. Melt butter in 13 x 9 pan.  Mix 2 cups flour and powdered sugar.  Pour into pan and stir into butter.  Press down firmly.
  2.  
  3. Bake 20 minutes at 350 degrees.  Beat together eggs and lemon juice. Stir in  sugar, baking powder, and 4 tablespoons flour.  Bake at 350 degrees for 25 minutes.  Sift powdered sugar on top while still hot.

Blueberry Torte

 Crust:

  • 16 Graham crackers, crushed (or about 10 ounces)
  • 1 stick butter
  • 1/4 cup sugar

Combine and pat into 9 x 12" pan


Layer 1:

  • 1/2 cup sugar
  • 2 eggs
  • 1 8 oz. cream cheese.

Beat together and pour over graham cracker crust. 

Bake 10 minutes at 350 degrees. 

Let cool. 

Layer 2:

  • Pour and spread a can of blueberry (or other fruit) pie filling. 

Layer 3:

  • Spread a carton of Coolwhip .

Chill and let set. 


Enjoy.

Orange Juice Cake


Orange Juice Cake

  • 1 box of yellow cake mix
  • 1 small box of vanilla instant pudding
  • 4 eggs
  • 1 cup orange juice, reconstituted from frozen juice using only 2 cans of water instead of the normal 3 cans.
  • ½ cup oil

  1. Allow eggs to come to room temperature.
  2. Blend eggs in the blender for 2 minutes.
  3. Preheat oven to 300 degrees.
  4. In large mixing bowl, combine the cake mix, dry instant pudding, blended eggs, and oil. 
  5. Add the orange juice.
  6. Stir for 300 strokes.   
  7. Spray bundt pan with Baker’s Joy.
  8. Fill pan with mixture.
  9. Bake on bottom rack of oven for 1 hour.
  10. Remove from oven and cool for exactly 10 minutes on the neck of a bottle so air can reach the bottom of the bundt pan.
  11. Invert cake on to a plate.  Cake should come out cleanly. 
  12. Return cake to pan.
  13. Poke holes in the cake with a fork.

                                                                                                

Glaze

  • 1 ½ sticks of butter
  • 1 ½ cups granulated sugar
  • ½ cup orange juice

  1. Cook glaze ingredients until butter is melted, and sugar is dissolved . 
  2. Continue cooking for 2 minutes, stirring constantly.
  3. Pour all the glaze over the holes of the cake, allowing the glaze to soak through it..   
  4. When totally cooled, invert cake on a cake plate. 
  5. Cut and serve.

Plum Rustic Pie


  • One refrigerator pie crust (bottom and top)
  • 2 lbs. plums (about 9)
  • ¾ cup sugar
  • 3 tablespoon cornstarch
  • 1 1/4 teaspoon ginger
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice (fresh)
  • ¼ teaspoon salt
  • 1 egg
  • 1 tablespoon water

  1. Preheat oven to 375 degrees.
  2. Place bottom pie crust in a ceramic pie dish.
  3. Form edge of the bottom pie crust to edge. 
  4. Dock with fork about 30 times. 
  5. Use pie weights to keep up the sides and on top of the bottom crust.
  6. Bake for 20 minutes in the middle rack of the oven. 
  7. Wash, pit, and slice plums into a mixing bowl.
  8. In another bowl, mix the sugar, salt, and the cornstarch,
  9. Add the ginger, lemon zest, and lemon juice.
  10. Remove the bottom crust from the oven.
  11. Reset oven to 400 degrees.
  12. Remove the pie weights from the bottom crust.
  13. Add the plum mixture to the pie crust.
  14. Put the top crust on the pie and pinch pie crust at the edges.
  15. Do some cutouts to let this juicy pie have some place to let the steam escape. 
  16. Mix egg and water. 
  17. Brush the top crust with the egg mixture. 
  18. Return the pie to the middle rack of the oven and bake 20 minutes. 
  19. Add aluminum foil to the edges to keep the crust from burning.
  20. Reduce temperature to 350 degrees and return to the middle rack of the oven for 40 minutes.
  21. Remove pie and remove foil from the edges.
  22. Allow to cool at least 3 hours so the cornstarch to set the filling.
  23. Cut, serve, and enjoy.

Baked Fireball Pineapple

 


  • I fresh pineapple, peeled and cut into rings
  • 1 oz. Fireball whiskey
  • 1 tablespoon olive oil
  • sugar and cinnamon mixture for sprinkling

  1. Soak pineapple in whiskey at least several hours in a Ziploc bag.
  2. Drain juice and whiskey mixture into a glass (save to make a drink).
  3. Add olive oil to bag and shake.
  4. Spread on an aluminum lined pie plate.
  5. Sprinkle sugar and cinnamon mixture over the pineapple.
  6. Bake in a 375 degree oven for 12 minutes.

Cherry Bars




Bottom Crust

  • 2 sticks butter
  • 2 cups flour
  • ½ cup powdered sugar


  1. Melt butter in a 9 x 13” baking dish in oven at 350 degrees.
  2. Stir in powdered sugar.
  3. Stir in the flour.
  4. Pat down and bake at 350 degrees for 20 minutes.
  5. Remove from oven. 


Middle Layer Filling

  • 1 can cherry pie filling
  • 1 teaspoon lemon juice


  1. Stir lemon juice into cherry pie filling.
  2. Pour onto the bottom crust and spread evenly. 


Crumb Topping

  • 6 tablespoons butter
  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 cup flour


  1. Cut butter into chunks with a pastry blender.
  2. Stir the sugar and salt together.
  3. Cut all the dry ingredients into the butter, making crumbs. 
  4. Distribute over the cherry layer evenly. 
  5. Return the layers to the 350 degree oven and bake for 35 minutes.

Pineapple Pretzel Salad




Bottom Layer
  • 1 ½ sticks butter
  • 1 cup sugar
  • 2 cups crushed pretzels
Middle Layer
  • 1-8 ounce cream cheese
  • 1-8 ounce cool whip
  • ½ cup sugar
Top Layer
  • 1 15 oz. can crushed pineapple drained
  • 2 Tablespoons cornstarch
  • ¼ cup sugar


Directions

  1.  Cream the sugar and butter of the bottom layer ingredients together.  Add the crushed pretzels and mix well.  Spread across an 8 x 8 inch pan.
  2. Mix the softened cream cheese and the sugar together of the middle layer.  Fold in the cool whip and spread it over the bottom layer. 
  3.  Heat the crushed pineapple of the top layer stirring in the cornstarch.  Stir constantly until thickened.  Add the sugar of the top layer towards the end and stir well.  Let cool.  Then spread over the top of the other two layers. 
  4. Chill for several hours in the refrigerator. 
  5. Cut into 9 pieces.  Serve and enjoy.

St. Patrick's Day Brownies



Brownies
  • 1 pkg of brownie mix
  • 2 eggs
  • Bailey’s Irish Crème original (enough to replace the water in the package instruction)
  • Cooking oil (as called for in the instructions)

  1. Mix and bake brownies according to package instructions, only replacing the water with Bailey’s Irish Crème original. 
  2. Cool for an hour.
  3. Spread icing on the brownies and cut. 


Icing
  • ½ stick butter
  • 2 cups powdered sugar
  • 2 tablespoons Bailey’s Irish Crème original
  • 3 drops green food coloring
  • 5 drops of mint flavoring 

  1. Cream butter and powdered sugar together.
  2. Stir in the Bailey’s. 
  3. Add the green food coloring and mint flavoring. 
  4. Stir until smooth.

Peach Cobbler




  • 4 cups unpeeled peaches sliced
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ cup water
    In another bowl, cut the butter into the flour and then add the sugar:
  • ¾ cups sifted flour
  • 1 cup sugar
  • 1 ½ sticks butter
  1. Grease a 9” x 13” baking dish.
  2. Arrange the fruit layer over the bottom of the dish.
  3. Sprinkle the crumbled layer over the fruit layer.
  4. Add extra sugar (1/2 cup). Dust with more cinnamon.
  5. Bake at 350 degrees for 60 minutes.

Poached Pears



  • 4 fresh pears
  • 2 tablespoons dried, pitted tart cherries (optional)
  • 1 cup sugar
  • 1 cup water
  • 1 teaspoon vanilla
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground ginger
  • 2 sticks of cinnamon
  • 6 star anise
  • ½ teaspoon whole cloves

  1. In a mixing bowl, put ice in it until it is about 1/3 full of ice and then run cold water in it until it is 2/3 full.
  2. In a two-quart pan, fill 2/3 full of water and bring to a boil.
  3. Plunge the washed pears in the boiling water for 20 seconds, making sure that all sides get covered.
  4. With tongs remove the pears, and plunge into the ice water.
  5. Remove the pears one by one, and peel.
  6. Half the pears, and remove the cores.
  7. Rinse out the pan that you boiled the water in and use it to make the poaching liquid.
  8. Add the sugar and water to the pan.
  9. Add all the spices and vanilla.
  10. Stir until smooth.
  11. Add the pears and heat about thirty minutes under a medium low heat, stirring often.
  12. Serve the pears with a slotted spoon, avoiding the anise, cloves, and cinnamon. You can refrigerate any leftovers in the poaching liquid and the flavors will intensify.

Strawberried Sugar Cookie



Warning: This dessert is extremely sweet. I made it to avoid using cream cheese, so that a lactose intolerant person could enjoy dessert.

  • 1 quart strawberries
  • 1 tub vanilla buttercream frosting
  • 1 stick butter
  • 3 tablespoons sugar
  • 1 cup flour


  1. Cut flour and sugar into solid butter, similarly as in preparing pie crust.
  2. Line a pizza pan with parchment.
  3. Press the crumbly mixture into the parchment lined pizza pan to make a cookie.
  4. Bake at 375 degrees for 12 minutes.
  5. Remove from the oven and let cool.
  6. Spread the large cookie with prepared vanilla buttercream frosting.
  7. Wash, stem, and slice strawberries and place the slices on the iced cookie.
  8. Cover with plastic, and refrigerate until serving.
  9. Cut into wedges.
  10. Serve and enjoy.

Orange and Grape Salad


  • 4 Cuties, peeled and separated into wedges
  • ½ cup grapes, washed and stemmed
  • 1 small container Yoplait Greek Tropical Fruit Yogurt
  • 1 tablespoon honey

  1. Mix all ingredients.
  2. Serve and enjoy.

Jello Strawberry Pie



Crust:
  • 1 stick butter
  • 3 tablespoons sugar
  • 1 cup flour
  1. Cut butter into pats and cut into the rest of the ingredients while still cold.
  2. Put mixture in the a pie plate and press to cover sides and bottom as evenly as possible (not rolled).
  3. Bake at 375 degrees for 12 minutes or until the edges are just beginning to brown.
  4. Allow to cool completely.

Filling:
  • ¾ cup sugar
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt
  • 1 cup water
  • 1 3 ounce package of strawberry Jello
  • 1 ½ quarts of fresh ripe strawberries, washed, stemmed and cut into quarters
  1. Bring sugar, cornstarch, salt and water to a boil, stirring constantly.
  2. Continue cooking and stirring constantly for 3 minutes on medium heat.
  3. Add Jello and continue stirring and cooking for another minute.
  4. Remove from heat and stir for 2 more minutes.
  5. Let cool 15 minutes but don't put in the refrigerator.
  6. Add the strawberries and stir.
  7. Pour the mixture into a the baked pie shell.
  8. Turn the strawberries so the outer sides are showing.
  9. Chill in the refrigerator for two hours.
  10. Serve, topped with whip cream (optional) and enjoy.

Baked Apple Roses Pastry



  • 1 sheet frozen puffed pastry
  • 2 honey crisp apples
  • Juice of a lemon
  • Water to cover the apples (amount depends on the size of the bowl)
  • 3 tablespoons peach jam
  • 1 tablespoon water
  • 3 tablespoons sugar
  • ½ teaspoon cinnamon
  • Non-stick cooking spray

  1. Preheat oven to 375 degrees.
  2. Spray a silicone cupcake pan with non-stick cooking spray
  3. Thaw the pastry sheet for 15 minutes and roll out until about a third larger in length.
  4. Squeeze one lemon's juice into a bowl.
  5. Add enough water to bowl to cover the apple slices. (You may have to add more as the apples are added.)
  6. Cut each apple in half vertically.
  7. Core the apple halves.
  8. Place apples flat side down and slice thinly horizonally.
  9. Add the apple slices to the lemon water.
  10. Add more water if necessary to cover the slices.
  11. Microwave the the apple slices in the water for 3 minutes.
  12. Remove from the microwave and drain.
  13. Add the one tablespoon water to the peach jam and stir until fairly smooth.
  14. Slice the pastry sheet into six strips.
  15. Take one of the strips, paint one side of it with the peach and water mixture, and place about 7 slices of the apples along the edge overlapping about half way along the length, and half way over each other apple slice.
  16. Sprinkle with the cinnamon sugar mixture.
  17. On one end, start rolling the pastry, holding it so that the apple slices appear to be rose petals when completely rolled.
  18. Place each rose in one of the cupcake compartments.
  19. Repeat this assembly process five more times.
  20. Bake at 375 degrees for 35 to 45 minutes.
  21. Serve and enjoy.

Key Lime Pie



  • 6 egg yolks
  • 2 cans Eagle Brand Sweetened Condensed Milk
  • ½ cup Nellie & Joe's Key West Lime Juice
  • 1 prepared graham cracker crust


  1. Preheat oven to 350 degrees.
  2. Whisk slightly the six egg yolks.
  3. Add 2 cans of sweetened condensed milk and whisk.
  4. Whisk in gradually ½ cup of the Key West lime juice. It will not be green. If your juice is green, it is not real key limes.
  5. Pour into the prepared graham cracker crust.
  6. Bake for 20 minutes on the middle rack of the oven.
  7. After 20 minutes, shut oven off and open the door and let it cool gradually for 30 minutes. If it cools too suddenly, it will crack.
  8. Transfer to a baking rack outside the oven to continue cooling for another 20 minutes.
  9. Refrigerate several hours before serving
  10. Slice, serve on plates, and enjoy.

Apple Spice Dessert



This dessert is so easy and delicious!
  • 2 cans apple pie filling
  • 1 boxed spice cake mix
  • 2 sticks butter


  1. Spray the bottom of a large slow cooker with non-stick spray. 
  2. Spread 2 cans of apple pie filling across the bottom. 
  3. Sprinkle the dry spice cake mix across the apple pie filling. 
  4. Put two sticks of butter on top. Cook in slow cooker on high for 2 ½ hours. It will be a soft dessert, rather than a crisp or cake texture.



Serve and enjoy.

Rhubarb Pinwheels



  • 2 cups sugar
  • 2 ½ cups water

Boil sugar and water until dissolved. Set this syrup aside to cool.

  • 6 tablespoons butter
  • 2/3 cup milk
  • 2 cups flour
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt

Melt butter and mix with milk. Let cool.
Add dry ingredients. Mix and knead lightly.
Roll 1/3 inch thick into a 6 x 12 inch rectangle.

  • 3 cups rhubarb, cut into ½ pieces
  • ½ cup confectioner's sugar
  • 1 tablespoon butter

Spread rhubarb over the dough and sprinkle with a crumb mixture of confectioner's sugar and butter.
Roll up and cut into 1 ½ inch slices.
Place in a 9 x 13 inch baking pan.
Pour the syrup over the pinwheels.
Bake 25 to 30 minutes in a 400 degree oven.

Apple Crisp



  • 4 cup honey crisp applies,  sliced (6 apples)
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ cup water


In another bowl mix up:

  • ¾ cups sifted flour
  • 1 cup sugar
  • ¾ cup butter

  1. In a 9 x 13 " baking dish, poor over top of applies.
  2. Add extra sugar (1/2 cup). Dust with more cinnamon.
  3. Baket 350 degrees for 60 minutes.

Frog Eye Salad



This makes quite a bit.  I made it in a 5 quart Dutch oven.  Great for taking to a potluck.  More like a dessert than a salad.  

Ingredients:

1 cup white sugar
2 tablespoons all-purpose flour
2 1/2 teaspoons salt
1 3/4 cups unsweetened pineapple juice (the amount of juice that drains off of the canned pineapple is about right amount)
2 eggs, beaten
1 tablespoon lemon juice
3 quarts water
1 tablespoon vegetable oil
1 (16 ounce) package acini di pepe pasta
3 (11 ounce) cans mandarin oranges, drained
2 (20 ounce) cans pineapple tidbits, drained
1 (20 ounce) can crushed pineapple, drained
3 (8 ounce) containers frozen whipped topping, thawed (fat free works fine)
2 cup miniature marshmallows
1 cup shredded coconut

Directions:

1.    In a sauce pan, combine sugar, flour, 1/2 teaspoon salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat; add lemon juice and cool to room temperature.

2.    Bring water to a boil, add oil, remaining salt and cook pasta 11 minutes stirring frequently. Rinse under cold water and drain. (You must use the oil on this pasta to keep it from clumping.)

3.    In a large bowl, combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled (at least 4 hours). Before serving add marshmallows and coconut. Toss and serve.
